Zucchini Squares

Boxed biscuit mix helps make this recipe quick and easy to prepare. Thinly sliced zucchini is mixed with biscuit mix, spices, chopped onions and Parmesan cheese. Beaten eggs and vegetables are stirred in before the mixture is spread into a sprayed baking dish. After baking these tasty zucchini squares can be served as an appetizer or side dish.

Ingredients

  • 3 cups thinly sliced zucchini unpeeled
  • 1 cup biscuit mix
  • ½ cup finely chopped onion
  • ¼ tsp dried oregano
  • ¼ tsp black pepper
  • ½ tsp salt
  • Dash garlic powder
  • 2 tbsp chopped fresh parsley
  • ½ cup grated Parmesan cheese
  • ¼ cup vegetable oil
  • 4 eggs light beaten

Instructions

  1. Combine all ingredients in a large bowl; mix well. Pour mixture into a sprayed 13x9 baking dish.
  2. Bake in an oven at 350 F for 30 minutes or until lightly browned. Cut into squares and serve as an appetizer or side dish.
