Impossibly Easy Banana Bread Coffee Cake

This coffee cake gets some help from Bisquick mix. Bananas are mashed and mixed with sugar, milk, vegetable oil, cinnamon and eggs. Bisquick and chopped nuts are mixed into the banana mixture. The batter is poured into a casserole dish. A streusel topping is made with more bisquick, chopped nuts, brown sugar and butter. The finished coffee tastes like banana bread!

Ingredients

Coffee Cake

  • 2-3 large ripe bananas mashed (about 1 ⅓ cups), plus 1 large banana, sliced
  • cups granulated sugar
  • ¼ cup milk
  • 3 tbsp vegetable oil
  • 1 tsp ground cinnamon
  • 3 eggs
  • 2 ⅔ cups bisquick mix
  • ¾ cup chopped walnuts or pecans

Streusel

  • 1 cup bisquick mix
  • ½ cup chopped walnut or pecans
  • ½ cup packed brown sugar
  • 6 tbsp butter cut into small pieces

Instructions

  1. Preheat oven to 350 F. Grease bottom and sides of 13x9 pan.
  2. In a large bowl, stir mashed bananas, granulated sugar, milk, oil, cinnamon and eggs. Stir in 2 ⅔ cups bisquick and ¾ cup nuts; fold in banana slices. Pour mixture into pan.
  3. In medium bowl, mix streusel ingredients, cutting in butter with pastry blender or fork until crumbly. Sprinkle over mixture in pan.
  4. Bake 30-36 minutes or until knife inserted in center comes out clean. Cut 4x3. Drizzle with syrup before serving.

Make ahead: cover and refrigerate up to 12 hours. Uncover and bake.
