Fish and Fries

This recipe for homemade fish sticks is so delicious you won’t want to make the frozen version again. White fish, such as cod, is cut into pieces. Then the pieces are dredged in flour, then dipped in an egg wash and then coated with a mixture of cornflakes, Parmesan cheese and cayenne pepper. Next the breaded fish are placed on a baking sheet. The fish is baked for 10 minutes or until flaky. Fries are a perfect side dish for these fish sticks.

Ingredients

  • 1 lb potatoes 2 medium
  • 2 tbsp potatoes
  • ¼ tsp pepper

Fish

  • cup AP flour
  • ¼ tsp pepper
  • 1 large egg
  • 2 tbsp water
  • cup crushed cornflakes
  • 1 tbsp grated Parmesan cheese
  • tsp cayenne pepper
  • 1 lb haddock or cod filets

Instructions

  1. Preheat oven to 425 F. Peel and cut potatoes lengthwise into ½ inch thick slices; cut slices into ½ inch thick sticks.
  2. In a large bowl, toss potatoes with oil and pepper. Transfer to a 15x10x1 inch baking pan coated with cooking spray. Bake, uncovered, 25 to 30 minutes or until golden brown and crisp, stirring once.
  3. In a shallow bowl mix flour and pepper. In another shallow bowl, whisk the egg with water. In a third bowl, toss cornflakes with cheese and cayenne.
  4. Dip fish in flour mixture to coat both sides; shake off excess. Dip in egg mixture, then in cornflake mixture, patting to help coating adhere.
  5. Place on baking sheet coating with cooking spray. Bake roughly 10 to 12 minutes or until fish just begins to flake easily with a fork.
  6. Serve with potatoes and tartar sauce.
