Easy Chicken and Broccoli Casserole

This easy to make casserole is perfect for a weeknight meal. Broccoli is cooked in boiling water until tender. Then cream of chicken soup, sour cream, lemon juice and seasoning are mixed together in a bowl. Next the broccoli is added to a casserole dish with cooked chicken. The soup mixture is poured over the broccoli and chicken. Shredded cheese is sprinkled on top with bread crumbs before baking.

Ingredients

  • 10.5 oz cream of chicken soup
  • ½ cup sour cream
  • 1 tsp lemon juice
  • ½ tsp curry powder
  • 4 cups fresh broccoli chopped
  • 3 boneless, skinless chicken breasts, cooked and cubed
  • ¾ cup shredded cheddar cheese
  • ½ cup soft bread crumbs
  • 2 tbsp butter melted

Instructions

  1. Preheat oven to 350 F.
  2. Cook broccoli in boiling water, until tender, then drain.
  3. In a small bowl mix together cream of chicken soup, sour cream, lemon juice and curry. Set aside.
  4. In a greased 9x13 baking dish add broccoli and chicken.
  5. Pour the soup mixture over top and mix together.
  6. Sprinkle with grated cheese. Combine bread crumbs and butter and sprinkle on top.
  7. Bake for 25 to 30 minutes.

Recipe Notes

I substitute chicken seasoning for the curry powder. Frozen broccoli can be substituted for fresh, cook based on bag directions.
