Strawberry Baked Oatmeal

This delicious and hearty breakfast cooks in a pie dish. Old fashioned oats are mixed with baking powder, salt and brown sugar. Then in a separate bowl mix, milk, vanilla and eggs are whisked together. Next the liquid ingredients are added to the oat mixture, and then melted butter and chopped strawberries are added. The oat mixture is added to a pie dish (or small square baking pan) and baked until golden.

Ingredients

  • 3 cups old fashioned oats
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 cup firmly packed brown sugar
  • 1 cup milk
  • 1 tsp vanilla extract
  • 2 eggs
  • ½ cup 1 stick butter, melted
  • 1 cup strawberries

Instructions

  1. Preheat oven to 350 F. Lightly spray 8x8 inch pan (or 9 inch pie dish) with nonstick spray.
  2. In a large bowl, stir the oats, baking powder and salt. Add the brown sugar and stir to combine.
  3. In another bowl, whisk together the milk, vanilla and eggs. Add the liquid to the oat mixture and mix well. Add the butter and mix well. Fold in the berries and pour the mixture into the prepared dish and bake for 35 to 40 minutes or until golden brown. Serve warm.

Recipe Notes

½ cup applesauce can be substituted for the butter. Raspberries or other berry can also be used.
