This easy to make grilled chicken recipe is great to make on a weeknight. Chicken is pounded out thin with a mallet. Lemon zest, lemon juice, olive oil and garlic are combined to marinate the chicken before grilling. The chicken quickly grills and tastes great. This recipe is great for a family or easily doubled for entertaining.

Ingredients
4 - 6boneless skinless chicken breaststrimmed of fat
½cupolive oil
1lemon
2clovesgarlicchopped

Instructions
Using a meat mallet, pound chicken breasts between 2 pieces of parchment paper to ¼ - ½ inch thickness.
Transfer chicken to a bowl with oil and toss to combine. Finely grate the lemon zest over the chicken, juice the lemon and add the juice to bowl with garlic and salt; toss to coat.
Prepare a grill or preheat grill pan over high heat. Grill chicken for 5 minutes per side or until cooked through.
Recipe Notes
I marinate the chicken overnight. Make an extra batch of marinade: ½ cup olive oil, zest of 1 lemon (and juiced), 2 cloves minced garlic and salt. Brush chicken with extra marinade while grilling.
