White chocolate, butter, lemon curd and lemon extract are cooked in a saucepan until the chocolate is melted. Then the chocolate mixture is poured over chex cereal in a large bowl. The mixture is stirred until the cereal is coated with the chocolate. Powdered sugar is added to the cereal mixture and stirred to coat, more sugar is added to fully coat the cereal. Then the cereal mixture is spread onto a cookie sheet to cool, then sprinkled with more powdered sugar.

8cupsRice Chex cereal
1cupwhite chocolate chips or candy melts
¼cuplemon curd
¼cupbutter
½tsplemon extract
2cupspowdered sugar
Instructions
Melt white chocolate, butter, lemon curd and lemon extract in a small saucepan over low heat, stirring constantly.
Pour cereal into a large paper bag (grocery size) and pour melted lemon mixture over cereal. Fold the bag to seal and shake to coat cereal.
Cool slightly, then add half of the powdered sugar to bag and shake to coat.
Add remaining powdered sugar and shake to coat.
Spread out on cookie sheet to cool. Sprinkle with additional powdered sugar as desired.
Once completely cool, store at room temperature in airtight container.
