This casserole is easy enough to make for a weeknight meal or can be a served as a Sunday supper. Cooked chicken is mixed with spinach, cream of chicken soup, sour cream, garlic powder, onion powder and cheese. Then French fried onions are stirred in before cut up biscuit dough is stirred into the mixture. Next the chicken mixture is spread into a baking pan and topped with more French fried onions. The casserole is baked until the mixture is bubbly and the biscuit pieces are golden brown.

Ingredients
2cupscooked chopped chicken
10ozpackage frozen spinachthawed and drained
10.5ozcan cream of chicken soup
1cupsour cream
½tspgarlic powder
½tsponion powder
1 ½cupsshredded Monterey Jack cheesedivided
2cans(6 oz) refrigerated Grands Jr biscuits
1can(2.8 oz) French fried onions, divided
Instructions
Preheat oven to 350 F. Lightly spray a 9x13 baking pan with cooking spray.
Combine chicken, spinach, soup, sour cream, seasonings and cheese. Stir in half of the onions.
Cut each biscuit into 4 pieces. Toss with chicken mixture.
Pour the chicken mixture into the prepared pan. Top with remaining half of the French fried onions.
Bake uncovered for 25 to 30 minutes, until bubbly and biscuits are golden brown.
