Honey Roasted Nuts

This delicious nut recipe is perfect for a summer get together. Almonds and cashews (or any nut mix preference) are mixed in a bowl. Then honey is heated in the microwave until bubbly. Next cinnamon, salt and cayenne pepper are added to the honey. The honey is poured over the nuts and then the nuts are baked until golden brown. Immediately after removing from the oven, brown sugar is sprinkled on top of the nuts. After cooling, the nuts are broken up and ready to serve.

Ingredients

  • 2 cups raw almonds
  • 2 cups raw cashews
  • cup raw honey
  • 1 tsp salt
  • ¾ tsp cayenne pepper
  • ½ tsp cinnamon
  • 2 tbsp brown sugar
  • Sprinkle kosher salt

Instructions

  1. Preheat oven to 350 F. Prepare baking sheet with parchment paper.
  2. Mix almonds and cashews together in a mixing bowl.
  3. Pour the honey in a small microwave safe bowl. Heat for 30 seconds to a minute, just until the honey starts to bubble and become liquidly. Remove and add cayenne pepper, cinnamon and salt. Stir well.
  4. Pour honey mixture over the nuts and mix well, until the nuts are well coated. Pour nuts on baking sheet and spread around evenly.
  5. Bake for 15 to 20 minutes or until the nuts are fragrant and nice and golden brown. Remove from oven and sprinkle 2 tbsp of brown sugar over the top. Add another sprinkle of salt, and let cool 10 minutes. Break up nuts with fingers and then let them finish cooling.

Recipe Notes

Cayenne pepper can be omitted. Store in refrigerator in warmer months or in airtight container on counter top. Can be frozen in freezer bags for up to 3 months.
